The Nordic Kitchen, Claus Meyer
One year of family cooking Claus Meyer
Book by noma co-founder Claus Meyer
Noma that was voted the best restaurant in the world several times!
With its focus on vegetables, seasonality, foraging, flavour, and its lightness of touch, new Nordic food lends itself perfectly to family cooking. In this book noma co-founder Claus Meyer brings the ethos that built the Nordic cuisine movement into the home with easy-going, accessible dishes that fit seamlessly into family life. The book is divided into four seasonal chapters, each with an extensive list of the best produce nature has to offer at that time of the year. The book also shows how to get the most out of food found in the wild, from chanterelles and wild garlic to plums and dandelions.
With recipes including Creamy Root Vegetable Soup with Crispy Bacon, Gravad Beef Topside with Celeriac Pickles, Pan-fried Mullet with Cucumber and Peas in Dill Butter and Rhubarb Cake you can bring the delicious flavours of the Nordic countries to life in your own kitchen.
Besides being the co-founder and co-owner of the restaurants noma, Radio, Studio and Almanak in Copenhagen, Claus Meyer has published 14 cookbooks in Denmark and hosted the Danish version of the international TV show, 'New Scandinavian Cooking', broadcast in more than 50 countries. Among his other business ventures, Meyer co-owns a number of artisanal bakeries and delis, an orchard, a micro vinegar factory, a coffee roaster and a high-end restaurant staff company employing more than 200 chefs. He also runs a cookery school, has established the Melting Pot Foundation and is an affiliate professor in Corporate Social Responsibility at the Copenhagen Business School. He currently lives in New York City with his wife, three daughters and two dogs.
